Chicken and Vegetable Stir-Fry

Ingredients:

  • 1 lb chicken breast, sliced thin
  • 2 cups mixed vegetables (broccoli, carrots, bell peppers, etc.)
  • 3 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned. Remove and set aside.
  2. In the same skillet, add vegetables and stir-fry until tender.
  3. Mix soy sauce, cornstarch, and 2 tbsp water in a small bowl.
  4. Return chicken to the skillet, add garlic and ginger, and pour in the soy sauce mixture.
  5. Cook for 2-3 minutes until sauce thickens. Serve with rice or noodles.
