Ingredients:
- 1 lb chicken breast, sliced thin
- 2 cups mixed vegetables (broccoli, carrots, bell peppers, etc.)
- 3 tbsp soy sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 1 tsp garlic, minced
- 1 tsp ginger, minced
Instructions:
- Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned. Remove and set aside.
- In the same skillet, add vegetables and stir-fry until tender.
- Mix soy sauce, cornstarch, and 2 tbsp water in a small bowl.
- Return chicken to the skillet, add garlic and ginger, and pour in the soy sauce mixture.
- Cook for 2-3 minutes until sauce thickens. Serve with rice or noodles.
