Homemade Chicken Soup

Ingredients:

  • 1 lb chicken thighs
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup noodles or rice
  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté onion, carrots, and celery until softened.
  2. Add chicken thighs and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Remove chicken, shred it, and return to the pot.
  4. Add noodles or rice and cook until tender. Season with salt and pepper.
