Ingredients:
- 1 lb chicken thighs
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup noodles or rice
- Salt and pepper to taste
Instructions:
- In a large pot, sauté onion, carrots, and celery until softened.
- Add chicken thighs and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove chicken, shred it, and return to the pot.
- Add noodles or rice and cook until tender. Season with salt and pepper.
