  • Small mixing bowl (for sauce)

Ingredients
  

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 eggs beaten
  • 1 cup frozen peas and carrots
  • 3 tbsp soy sauce
  • 1 tbso sesame oil

Instructions
 

  • Heat sesame oil in a skillet over medium heat
  • Scramble eggs and set aside.
  • Add chicken, peas, carrots and rice to the skillet.
  • Stir-fry for 3-4 minutes.
  • Add soy sauce and scrambled eggs.
  • Mix well and serve hot
