One-Pot Chicken and Rice

Ingredients:

  • 4 chicken thighs
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper

Instructions:

  1. Heat oil in a large pot over medium heat. Sear chicken thighs until golden brown, about 3-4 minutes per side. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant.
  3. Add rice, paprika, salt, and pepper, stirring for 1 minute.
  4. Pour in chicken broth and nestle the chicken thighs on top.
  5. Cover and simmer on low heat for 20-25 minutes, until rice is cooked and chicken reaches an internal temperature of 165°F.
