Ingredients:
- 4 chicken thighs
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
Instructions:
- Heat oil in a large pot over medium heat. Sear chicken thighs until golden brown, about 3-4 minutes per side. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant.
- Add rice, paprika, salt, and pepper, stirring for 1 minute.
- Pour in chicken broth and nestle the chicken thighs on top.
- Cover and simmer on low heat for 20-25 minutes, until rice is cooked and chicken reaches an internal temperature of 165°F.
